Bird's Custard is the brand-name given to (and original version of) a cornflour-based powder that, when mixed with milk, thickens to form a custard-like sauce. It was invented by Alfred Bird in 1837 because his wife was allergic to eggs, a key ingredient used to thicken custards.
In some places, such as the United Kingdom, the popularity of this type of dessert is such that it is simply known as "custard". In such cases, general usage of the word may be more likely to refer to the "Bird's" custard rather than to the traditional egg-based variety.
This is a quick and easy way to make traditional British custard on the hob. You mix 2 tablespoons of powder with some sugar and milk and mix to a paste. Then add 1 pint of nearly boiling milk, and heat gently to the boil. Serve over your favorite pudding!
